Tarragon Blue Cheese Sauce

The aioli cayenne sauce shortcut recipe, using mayonnaise as a base instead of making it from scratch in the blender, was such a success that I decided to try the same thing with a tarragon flavored sauce.

It worked. It was simple, too. I served it with cornbread shrimp and it was a huge hit. But because of the flavorings in this sauce, it is also good on steak!

To make it, start with enough mayonnaise to serve the number of people you have. For example, one cup should make plenty of sauce for 4-5 people.

Put the mayo in a small bowl, and add a couple of teaspoons of dried tarragon, a tablespoon of lemon juice, a teaspoon of cayenne and stir. Add a few tablespoons of crumbled blue cheese, according to your taste.

Let the sauce sit while you fix dinner, and by then the tarragon will have softened and released its flavor into the sauce. Taste it and adjust the quantities if you wish.
